Some of my favorite recipes are the ones I make so often I barely think about them anymore. This simple salad dressing is one of those recipes.

It comes together in less than a minute with a few pantry staples I almost always have on hand, and it works with nearly any salad combination. I usually make a single serving at a time directly in a small bowl, but you can easily double or triple it for a larger salad.

If you make homemade dressings often, having a good lemon squeezer, mixing bowl, or small glass jar nearby makes it even easier to throw together quickly.

Equipment

  • Small mixing bowl or jar
  • Spoon or small whisk
  • Lemon squeezer (optional)

Ingredients

  • 1 –2 tablespoons Dijon mustard
  • Juice from 1/2 lemon
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • Optional: 1 tablespoon nutritional yeast
  • Salt to taste

Instructions

  • Add everything to a small bowl or jar and mix until smooth and combined. Pour over your salad and toss well.

Notes

  • This recipe makes enough for a single serving salad. Double or triple it for larger salads.
  • I usually salt the salad itself instead of the dressing, but you can add salt and pepper directly to the dressing if preferred.
  • For a creamier version, add a spoonful of plain yogurt.
  • Add a small splash of sesame oil or coconut aminos for a different flavor profile.
  • Adjust the Dijon or lemon depending on how tangy you like your dressing.
