Sourdough Discard Granola (Naturally Sweetened)

- 1½ cups pecans
- 1 cup chia seeds
- 1 cup flax seeds
- 2 cups oats
- ½ cup honey
- 1 cup sourdough discard
- Pinch of salt
- 1 tbsp cinnamon
- 1 tbsp vanilla extract
- Dates chopped
- Coconut flakes optional
Preheat oven to 350°F.
Mix dry ingredients in a bowl.
Add honey and sourdough discard and stir until combined.
Spread onto a lined baking sheet.
Bake for 30 minutes, stirring every 10 minutes.
Watch carefully near the end so it doesn’t burn.
Cool completely before adding dried fruit or coconut.
Store in an airtight jar or container.
